Nourish! Vegan Roast Dinner for 2


For 2 generous servings.

Takes 10 minutes prep & 40 mins to cook.

Ingredients:

2 small sweet potatoes diced

1 inch fresh ginger minced

fresh rosemary, chopped

fresh thyme, chopped

1 parsnip, cut into chunks

2 carrots, cut into chunks

2 red onions, halved and peeled

2 whole garlic bulbs; cut the tops off but leave the paper on

green beans, halved

3 asparagus, cut into chunks

handful brussel sprouts; cut tiny bit off bottom stalk, peel outer leaves and cut 2 serrations which cross eachother into the bottoms

half a red cabbage, shredded

vegan gravy powder

boiling water for gravy

optional; some vegan stuffing made according to pack

1 hour to go:

Boil your kettle and peel/cut up your carrots, parsnips and potatoes.

Slice the tops of the garlic bulbs and halve the onions.

55 minutes to go:

Once kettle has boiled pour into a pan and bring to the boil on the hob; place potatoes in the pan until water begins to boil. Cook 5 to 10 minutes until a fork can cut into portion.

Arrange parsnips, carrots, garlic and onion halves in a roasting tin with a tiny smearing of coconut oil, add salt and plenty of fresh herbs (rosemary & thyme)

45 minutes to go:

Carefully drain the boiling water from the potatoes. Put a lid on the pan and shake the potatoes about in the pan vigorously until they are fluffy and messy pieces. Transfer to a separate pan with coconut oil and salt

40 minutes to go:

Place the tray of potatoes and the tray of parsnips & carrots in the oven to cook.

Prepare your brussels, cabbage, green beans, cauliflower and stack them into your steamer ready to cook

30 minutes to go:

Boil the kettle and add boiling water to your stuffing mix. Leave to cool slightly in bowl

25 minutes to go:

Roll the stuffing into balls.

Turn the steamer on for 25 minutes.

20 minutes to go:

Turn the potatoes, carrots and parsnips over.

Add the stuffing balls to one of the trays. Return to the oven.

If you are cooking the vegan nut roast balls, add them to the oven now too.

5 minutes to go:

Boil the kettle for the gravy. Prepare in a jug

0 minutes to go:

Serve the veg from the oven, the veg from the steamer, add the stuffing and nut roast balls.

Add condiments and enjoy!
